Fizzical is back bb. I decided to start leaving all of the sparkling to age sur latte for 2 years minimum. Trying to give the wines the care and intention that they deserve. These are all made with the same high quality vineyards that produce all of the still wines, not some over cropped and cheap fruit source.
Pinot Noir from Bob’s vineyard just outside of Corralitos that we started farming together in 2020. The base wine was the same as that which went into Dreams on Layaway in 2021. A mealybug outbreak led to a lot of botrytis so the wine was very gently pressed, with free run and hard pressings being discarded to avoid volatility.
Aged for 2.5 years on the lees before disgorging. The wine is pure, lush, and vivid. There's depth and umami in balance with acid and a touch of sweetness. The botrytis character comes across like subtle salted caramel and saffron mixed with mellow oxidative qualities. This wine is going to age incredibly well.
